The gel that the sonographers use to put on the patient's stomach, what exactly does it do? Is it important to put that on the patient's stomach or can you create images without it?

The gel allows an acoustic "impedance match" between the cable that transmits the sound waves from the imaging device to the patient's stomach. The prevents the occurence of confusing reflections from an air gap between the cable and the body.
