How do you find the actual distances of these problems with a scale of 3/4" = 500 mi.

You could set up a proportion. Cross multiply and solve for x.

0.75/500 = 1.75/x
0.75x = 875
x = 1,166.67 miles

1 3/4 = 7/4 inch

7/4 inch*(500 miles/.75 inch) = 1167 2/3 miles

14" (500mi/.75") = 9333 1/3 mi
