The only famous person I know who graduated from U of Phoenix is Shaquile O'Neal and he has a "job" already, so to speak.

I suggest you investigate your local public junior colleges. Also talk with admissions people at universities. You may be able to get scholarship help by attending on-site classes. Many colleges and universities also offer online classes.
