In 1, "you" needs to be replaced by "your" -- possessive with a gerund.

2 is OK (correct the apostrophe in "can't") but it's rather awkward. The present progressive verb tense usually ends up being wordy.
3 would be better if you don't use "you" --
I can't stand people who grumble all the time.
